TIC Gums has developed Ticaloid LC-SR6, a gum blend designed to boost the soluble fiber content of bread products. Among other ingredients, the blend includes in-ulin and guar gum. According to the company, each gum imparts its own key characteristics, yet works in a synergistic way to allow for a high loading level of soluble fiber. In the recommended recipe, about 20% of the flour is replaced with Ticaloid LC-SR6. Most commercial breads contain less than 5 grams of total fiber per serving, compared to the bread recipe incorporated with Ticaloid LC-SR6, which provides 3 grams of soluble fiber and 3 grams of insoluble fiber per 50 gram serving.
